SAMAI MILLET N MUTLIGRAIN SPROUTS PANIYARAM

Samai is rich in antioxidant, fiber and helps in reducing cholesterol. Also it contains lesser carbs than rice. Added multigrain sprouts which makes this paniyaram more healthier.
What you need:
1 cup - Samai Rice
1 cup - Mutli grain Sprouts
1/2 cup - Brown rice
2 tbsp - Thoor dhal
2 tbsp - Channa Dhal
1 tsp - Cumin seeds, 1/2 tsp - Black Pepper
2 nos - Green chilies 
1 tsp - Ginger
Salt as reqd
Asafoetida powder 

How to make:

Soak above all except salt and hing for 2 hrs and grind to coarse batter.

Add salt and hing mix well and let it stay for couple of hours. Pour into paniyaram pan and cook on both the sides.


Serve hot with chutney, sambar and hot coffee!!

MUSHROOM n EGG WHITES PUNJABI MASALA

Weekend lunch is always special. Inspired from Punjabi Cholle Masala recipe from Rumana's space made this mushroom and egg whites punjabi style masala and paired with phulkas for lunch. 
What you need:
250 gram - Button Mushrooms, chopped
4 nos - Egg whites
1 no - Onion, chopped
2 nos - Tomato, chopped 
2 nos - Green chillies, slit
1 tsp - Red chilly powder
1 tsp - Turmeric powder
1 tsp -Coriander powder
1 tsp - Garam masala
2 tsp - Punjabi chole masala
1 tbsp - Ginger n garlic paste
1 no - Cardamom, 1 no - cinnamon stick,  1 tsp - Cumin seeds, 1 no - Bay leaf
Oil and salt as reqd

How to make:
In a pressure pan heat oil add cardamom, cinnamon stick, cumin seeds, bay leave, onion, green chilli and saute till golden.

Add the masala powders, ginger n garlic paste mix well for couple of mins once sauted add tomatoes and cook till they soften. Add mushroom, water, salt and cook for 4 mins covered. 

At last add egg whites mix well cook for a min and switch off the stove add fresh coriander and serve hot with roti and salad.

VADA MANCHURIAN

Leftover vada batter??? Try this yummy Vada Manchurian. It can be made into gravy if you need to accompany for roti. Came across this recipe at a nearby shop which sells variety of vadas and this caught my attention and tried it.
What you need:
Urad dhal - 1 cup (soaked for 4 hrs and ground to coarse paste)
Onion - 1 no, chopped
Green Chilly - 3 nos
Ginger - 1 tsp
Oil – for frying
Onion, Tomato, Capsicum - 1 cup, cut into cubes
Soy Sauce, Tomato Sauce, Red Chilli sauce - 1 tsp or more if reqd
Salt as reqd
Black pepper as reqd
Fresh Coriander - 2 tbsp

How to make:
To the dhal mix add onion, ginger, green chilly, salt, asafoetida and mix well. Make small balls and fry until done.

Heat oil in a pan saute onions, capsicum and tomato cubes saute well and add sauces add 2 tbsp water cook for couple of mins add vadas, black pepepr mix well and switch off the flame.

Add fresh coriander and serve hot!!

MIX VEG OATS SOUP

Veggies and Oats into soup makes a perfect low calorie tummy filler for dinner!! I prefer my soup with some crispy wheat crackers..
What you need:
Oats - 1/2 cup
Mixed veggies - 1 cup (carrots, peas, peppers, celery)
Onion - 1/2, finely chopped
Veg stock / Water - 1 cup
Milk - 1 cup
Olive oil - 1 tsp
Pepper as reqd
Salt  as reqd
Fresh herbs - 2 tbsp finely chopped

How to make:
In a pan heat oil add onions, veggies, oats saute well add veg stock and cook until soft.

Add milk, salt, pepper powder and cook for a min and switch it off. Add finely chopped herbs and serve hot.

MASALA OATS

Savory Oats with loads of vegetables makes a great breakfast / lunch.
What you need:
1/2 cup - Instant Oats
1 cup - Bell peppers, Fresh peas, Carrots
1 no - Onion, chopped
1/4 cup - Tomatoes, chopped
1/4 tsp - Turmeric powder
1 tsp - Olive oil
1 tsp - Lemon juice
2 nos - Green chillies
1/4 tsp -Cumin seeds
2 tbsp - Fresh coriander 
Salt as reqd

How to make:
In a pan heat oil add cumin seeds once it cracks add onion, green chillies, veggies and saute well.

Add veg stock or water add tomatoes, turmeric powder, salt and mix well.

Now add oats mix well and cook till its done. Sprinkle fresh coriander add lime juice and serve hot!!

KATTUYANAM ARISI KALAN MASALA DOSAI

Kattuyanam is a traditional variety of rice grown in Tamilnadu. Mostly organic farmers only prefer growing this crop. This rice variety is very high in protein, controls sugar and provides strength to veins. Most of the Organic stores in Chennai stores this rice variety. 
What you need for Dosa Batter:
Kattuyanam rice - 1 and 1/2 cup
Brown rice - 1and 1/2 cup
Black Urad Dhal- 3/4 cup
Fenugreek seeds - 1/4 tsp
Salt as reqd

How to make:
Soak rice with methi seeds and dhal seperately for 5 hrs and grind to smooth batter mix it add salt and ferment it.
What you need for Kalan Masala:
Mushroom - 1 pkt
Onion - 1 no
Tomatoes - 2 nos
Ginger n Garlic paste - 1/2 tsp
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Coriander - 2 tbsp
Saunf - 1/4 tsp
Oil- 1 tsp
Salt as reqd

How to make masala:
Heat oil in a pan add saunf roast it add onions saute well add tomatoes, ginger n garlic paste mix well add red chilli powder, coriander powder and cook till tomatoes soften.

Add chopped mushrooms, salt, garam masala and add 3/4 cup water and cook till the masala is cooked. Switch it off and add chopped coriader.

Make crispy dosa and add mushroom masala in dosa and serve hot.
