Eggless Jam filled Vanilla cupcakes with strawberry icing

Feb 14th nearing... hmm nothing special on this day but something spcl to eat..yaa much welcomed..

Made these simple eggless butterless vanilla cupcakes a simple recipe from one of my dear blogger friend Vimitha's blog(Vanilla sponge cake recipe). Made a simple butter cream strawberry icing and just for a twist filled jam in the center which gave specl yummness, so much addictive..


What you need for cupcake: 
All purpose flour – ¾ cup
Strawberry jam - 3 tbsp
Thick Yogurt – 1/2 cup
Sugar – 3/8 cup or 6 tbsp
Baking soda - 1/4 tsp
Baking powder – 1/2 tsp + pinch
Vegetable Oil - 1/4 cup
Vanilla extract – 1/2 tsp

How to make:
Preheat oven to 180C. Fill the muffin tray with muffin layers.

Beat the yogurt and sugar mix well add baking powder and baking soda combine it add vanilla extract, oil, flour and fold the mixture.



Spoon batter into muffin tins about 1/2 add half tsp of jam into the center of each cupcake. Then cover with batter until the liner is 3/4.

Bake for 15 to 20 minutes and let it cool completely.


For the Strawberry Butter cream Icing:

Icing Sugar - 1 cup
Butter - 2 tbsp
Strawberry Jam / Preserve - 2 tbsp

Mix all the above said ingredients well fill in the piping bag and decorate the cupcakes as required.

Add sprinklers as you wish.. Chill and surprise your loved ones!!
