QUICK MUSHROOM N BELL PEPPERS STEW

Nowadays all I want to do is to hug my pillow tight n sleep till 9 am. But my SH without waking me up questions me like is coffee decoction thr and so on... So without any second thoughts i jus jump up before he starts messing the kitchen. But i will make sure that he makes the coffee for me...

When SH is at home, I always cook something spicy because we don't eat much outside.. we prefer staying home and eat the simplest home food. 

Decided to make a spicy Kerala style stew to go along with Bajra dosa.This was defiently a sooper quick curry / stew when all the ingredients are avbl. This can also make a great side dish for any Indian bread.
What you need:
Mushroom - 1 pkt, cleaned and chopped
Bell Peppers - 1 cup, chopped
Onions - 1 no, sliced
Tomato - 1 no, chopped
Green chillies - 1 nos, slit
Ginger n Garlic - 2 tsp, chopped
Cinnamon + clove + cardamom - 1 no each
Coconut milk - 1 cup
Red chilli powder - 3/4 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Garam masala - 1/4 tsp
Curry leaves - 1 sprig
Coriander leaves n Mint leaves - 2 tbsp
Oil - 1 tbsp
Salt as reqd

How to make:
Heat oil in a pan fry the spices add onions, curry leaves, green chillies, ginger n garlic and saute well.

Add all the spice powders, tomatoes and cook till it softens. Now add mushroom n peppers, coriander, mint leaves and stir well. 

Pour in the coconut milk, salt, put in on low flame cover and close the lid and before it starts to boil switch off the flame and serve hot!!
