SOYA MEAL N BELL PEPPERS MASALA RICE

If i don't have my proper dose of food n sleep the earlier nite the next day it reflects in my cooking .. yupp i end up doing a stir fry rice / masala rice for lunch. My SH does not prefer such dry variety rice wen packed for lunch since he had his work from home schedule i ended up making this and hit my bed once my tummy was full for a proper afternoon nap..

There is no such rules to be followed in making a quick masala rice whatever comes out of the fridge n the shelf ends up n def they taste good too.. This is one such saver rice which i made to make my tummy happiee..
What you need:
Cooked Basmathi Rice - 1 cup
Mini Soya chunks - 1/2 cup (cooked)
Veggies - 1 cup (Mushroom, bell peppers)
Onion - 1 no (chopped)
Tomato puree - 1 tbsp
Green chilly - 2 nos + Ginger - 1 tsp + Garlic - 3 pods, crushed
Red chilli powder - 1/2 tsp
Garam Masala - 1/2 tsp
Mint n Coriander leaves - 1/4 cup, chopped
Bay Leaf - 1 no, + cinnamon stick - a small piece + Cardamom - 2 nos + Cloves - 2 nos
Salt as reqd
Oil -  tbsp

How to make:
Heat oil in non stick pan add spices saute well, add the chillies, g n g paste mix well add onions and cook till they turn soft.

Add tomato puree, dry powders, mint n coriander laves saute well add 2 tbsp water and mix em up.

Throw in veggies n soya chunks, add salt mix well. Now add rice stir in and cover it for 2 mins .. remove and serve hot with raitha!!
